A rare understandable book on food Sensory.
This was perfect for me because I'm a trained panelist for UGA Food Science sensory. It was educational, easy to read, and fun.

A knowledgeable and informative foray into the synergistic senses that contribute to the overall stage of gastronomy: Flavor. Easily digestible with lots of science and layman's terminology, this book is a must for anyone with a passion for food and drink. If you're looking to expand your understanding of what's happening as you experience gastronomy, this is a great place to start. A great read that I refer to often.

A 365 views on flavor.
A good book with a lot of information.Parts of my work is related to tasting and sensory analysis, a subject i always found elusive.This book answered to questions, make sense with my experience, removed some outdated info and opened perspective ( the part on flavor and big data looked promising).The style is clear and easy to read ,the content is based on scientific studies or interviews of specialists on the field.There is a lot of reference at the end of the book if you need to deepen some point.

Entertaining and Informative
This is a book that is filled with facts and is very interesting. As an example, the author claims that human noses are just as effective as a dog. You will have to read the book to find out why he thinks that. It talks about why our tastes change over time and the linkage between scent and flavor. There is a little bit of technical jargon but that is what makes this hit at all levels.

Probably 3.5 stars. Generally pretty good but not quite as enlightening as I had hoped. In the general genre, I liked The Emperor of Scent better.

"Flavor" is a great book for those interested in why we perceive foods ...
"Flavor" is a great book for those interested in why we perceive foods as we do, or for someone like me who has flavor chemistry experience but has been out of the field for a bit. Easy to understand, but also goes into a lot of the chemical and scientific reasons for readers interested in those details. Highly recommend.
